EASY CHOCOLATE MOUSSE

Such an easy an inexpensive, yet delicious recipe. Very easy to put together a few hours before your guests arrive (or just for yourself of course!).


Easy Chocolate Mousse

Ingredients


  • Dark chocolate, 70 per cent cocoa solids, roughly chopped, 150g

  • Egg whites (from medium eggs), 6

  • Granulated sugar, 40g

  • A pinch of salt

Method

Melt the chopped chocolate in a heatproof bowl, over a pan of simmering water. I always add a pinch of salt, to lift the flavour of the chocolate. Make sure the bottom of the bowl is not in direct contact with the water.


While the chocolate is melting, in another clean, dry bowl, whisk the egg whites util they form soft peaks. I used an electric whisker. Then gradually add the sugar and continue whisking until you reach firm peaks.

Let the melted chocolate cool a little and then take 2-3 spoonfuls of the egg whites and whisk them into the chocolate, whisking the mixture very briskly. Fold in the remaining whites and again, mix quite briskly. This to prevent the chocolate from solidifying.


Distribute the mousse into 4 glasses and leave to set in the fridge for at least 5-6 hours before serving. If you leave them in the fridge too long, the mousse will lose its lightness and will become more compact. This is why I don’t make it too long in advance, but it's down to your personal preference.


Decorate as desired. I decorated it with some lightly whipped double cream and fresh raspberries.
